The Laboratorio de Investigación en Nuevos Alimentos y Nutrición (LINAN) focuses on the development of innovative and functional foods, with a strong emphasis on the recovery of local production surpluses to create accessible options for vulnerable populations. Its research includes the technological characterization of foods, such as probiotic fermented beverages, evaluating different preservation methods to facilitate storage and transport. In addition, LINAN studies the antimicrobial effect of essential oils used as preservatives, the development of plant-based functional foods, and the optimization of dehydration processes for fresh vegetables and tubers, minimizing nutrient loss. LINAN combines innovation, technology, and nutrition to promote sustainable, safe, and functional food solutions.
